Cumin-Scented Turkey Salad with Apples and Celery

If you’re looking for a quick, healthy lunch to use up leftover turkey, try this delicious cold salad. It’s packed with protein and healthy fats to keep you satisfied, and tangy Granny Smith apple, celery and lemon juice provide a few carbohydrates for energy but not enough to send you into a post-lunch food coma. If Thanksgiving is in the distant rear-view, just use cooked chicken instead.
Ingredients for One Serving:2 tablespoons store-bought or homemade mayonnaise¼ teaspoon ground cuminJuice of 1 lemon6 ounces cooked turkey or chicken, cubed½ Granny Smith apple, julienned1 celery stalk, mincedFreshly ground pepper
  1. Whisk the mayonnaise, cumin and lemon juice together in a small mixing bowl.
  2. Add the turkey, apple and celery, tossing gently to coat.
  3. Season with pepper.
  4. Serve alone or in lettuce cups.
